Ewa Aganyin (Yoruba)

Ewa Aganyin (also spelled Ewa Agoyin) is a popular Yoruba street food enjoyed across Nigeria, Benin, and Togo.


Description

  • Base: Black-eyed or brown beans, cooked until extremely soft and mashed
  • Stew: Made with palm oil, bell peppers, onions, ginger, and dried chilies
  • Texture: Creamy beans topped with a spicy, glossy red oil stew

Ingredients

  1. Beans (black-eyed or brown)
  2. Palm oil
  3. Bell peppers
  4. Onions
  5. Ginger
  6. Dried chilies
  7. Seasoning (salt, bouillon)

Preparation

  1. Soak and cook beans until very soft.
  2. Mash the beans into a smooth paste.
  3. Fry chopped onions, bell peppers, ginger, and chilies in palm oil until fragrant and the oil turns red.
  4. Season the stew, then pour over the mashed beans.

Serving

  • Traditionally served hot with slices of bread, making Ewa Aganyin and bread a classic street-food pairing.
